All set and ready for some tasty sea lollies!! Scallop season kicking off on the 1st September hope everyone is equipped and ready! Scallops are found in sheltered bays and harbours on substrates of sand, shell gravel, or in some cases silt. For scuba diving the ideal depth is to boat anchor at 15 metres and dive between metres.
Finding scallop beds freediving is ideally between the metre mark. Scallops settle just below the sand with their shell slightly open feeding and if lucky can also be spotted sitting on top of the sand if they have recently moved. When looking for scallops I like to stay an arm's length off the sea bed and scan for the outline shape of the scallop or a slight mound of unsettled sand that a scallop has dug under.
Monitoring of shellfish and water quality is carried out to specifications set by the Ministry for Primary Industries and international markets. A temporary closure for commercial and recreational scallop harvesting in the Nelson and Marlborough Sounds area for the season was announced by the Ministry in July to enable stocks to rebuild. They are best harvested before they spawn. Scallops use a form of jet propulsion to swim. They snap their shells shut to make water shoot out at the hinge, moving the shellfish in jerky jumps across the seabed.
Scallops are tender and juicy when cooked quickly on a high heat with a light, gentle touch. If overcooked, their texture can become rubbery. They should be removed from heat as soon as the flesh changes from translucent to white. Scallops should be bought plump and fresh, with firm lustrous flesh, showing no signs of discolouration or dryness.
Scent is also a good indicator of freshness - scallops should smell slightly sweet and pleasantly briny but not sharp. Skip to main content. For example, you can mark your catch-bag handle with the minimum legal size for the shellfish you are collecting, or purchase a scallop measurer and catch- bag combo. Remember that returned shellfish must be given the best opportunity to survive and should be returned to the same place that they were taken from. Returned to a different habitat type eg: rocky reefs, deep water will mean that they are unlikely to be part of the spawning population or even survive.
